Spring patties with carrots and peas mash . Polpettine primaverili con purè di carote e piselli


Ingredients for 2 people:
300 g potatoes
300 g carrots
300 g peas
2 eggs
4 tbs grated cheese
4 tbs flour
1 tbs evo oil
40 g cream cheese

Boil potatoes, carrots and peas. In a blender put all the potatoes, half carrots, eggs, grated cheese and flour. Blend the ingredients, then add half peas, salt and pepper.
Mash the remaining carrots and peas separately, adding to each, half the cream cheese. 
In a pan heat the oil. Spoon the mixture into the pan, when the bottom side it's golden, turn it and let the other side cook.



Ingredienti per 2 persone:

300 g patate
300 g carote
300 g piselli
2 uova
4 cucchiai formaggio grattuggiato
4 cucchiai farina
1 cucchiaio olio extra vergine
40 g formaggio spalmabile

Fate bollire patate, carote e piselli. In un mixer mettete tutte le patate, metà delle carote, le uova, il formaggio grattuggiato e la farina. Frullate. Una volta ottenuto il composto, aggiungete metà dei piselli, sale e pepe.
Frullate separatamente le carote ed i piselli che avete tenuto da parte, aggiungendo ad ognuno metà del formaggio spalmabile.
In una padella scaldate l'olio. Aiutandovi con due cucchiai prelevate il preparato e adagiatelo nella padella. Quando il lato inferiore si è dorato, girate la polpettina e fate dorare anche dall'altra parte.

Potato cakes with surprise . Tortini di patate con sorpresa


And here we are, with our third recipe with the ingredients of the month.

Ingredients for 8 cakes:
300 g potatoes
2 eggs
25 g grated cheese + for dusting (I used Parmesan)
25 g butter + for greasing
50 g carrots
50 g peas
50 g emmentaler

Boil potatoes. In the meantime, dice the carrots. In a pan, heat a sprinkle of evo oil, add carrots and peas. Let cool. Dice the emmentaler and add to the vegetables.
Once soft, drain, peel and mash potatoes, add eggs, grated cheese and butter, mix well.
Bring the oven at 180°C/350°F.
Melt a small piece of butter, grease a muffin pan, spread the potatoes mixture on the bottom and sides, add the vegetables and cover with more potatoes.
Grease the top of cakes with a little more of melted butter, sprinkle with grated cheese.
Bake for 30 minutes.

Ingredienti per 8 tortini:
300 g patate
2 uova
25 g formaggio grattuggiato + per spolverare
25 g burro + per imburrare
50 g carote
50 g piselli
50 g emmentaler

Fate bollire le patate. Nel frattempo, tagliate a dadini le carote. In una padella, scaldate un po' d'olio, aggiungete le carote ed i piselli. Lasciate raffreddare. Tagliate a a cubetti l'emmentaler e aggiungeteli alle verdure.
Una volta morbide, scolate, pelate e schiacciate le patate; aggiungete le uova, il formaggio grattuggiato ed il burro e mescolate bene.
Accendete il forno a 180°C.
Sciogliete un po' di burro, imburrate uno stampo da muffin, distribuite le patate sul fondo e sulle pareti, aggiungete le verdure e coprite con altre patate.
Distribuite ancora un po' di burro sciolto sul tortino e del formaggio grattuggiato.
Infornate per 30 minuti.

Vegetarian quiche with greek yogurt . Torta salata vegetariana con yogurt greco



Here we are with our new appointment in March. Do you remember this month's ingredients, right? Peas, carrots and potatoes.

Ingredients for 1 quiche:
150 g carrots
150 g potatoes
150 g peas
200 g greek yogurt
2 eggs
1 roll puff pastry

Turn on the oven at 180°C/350°F.
Dice carrots and potatoes. Put them in a bowl together with peas, yogurt and eggs. Stir well.
Roll out the pastry and lay in a baking tin, prick the bottom of the pastry with a fork, pour the filling in, even it out and place on the bottom rack of the oven for 40 minutes on until the quiche looks golden.
Note: carrots are going to be crunchy, if you prefer them softer, just cook (microwave/boil) them for 5 minutes.

Ingredienti per 1 torta:
150 g carote
150 g patate
150 g piselli
200 g yogurt greco
2 uova
1 rotolo pasta sfoglia

Scaldate il forno a 180°C.
Tagliate a cubetti le carote e le patate. Versatele in una ciotola, assieme ai piselli, lo yogurt e le uova. Mescolate bene.
Foderate lo stampo di una tortiera con la pasta sfoglia, bucherellate il fondo, versateci dentro il ripieno, livellatelo bene ed infornatelo nella parte bassa del forno. Cuocete in forno per 40 minuti o fino a doratura.
Nota: le carote risulteranno un po' croccanti, se vi piacciono più morbide, cuocete (in microonde o sbollentando) le carote per 5 minuti.

Russian salad . Insalata russa

What am I to do? Should I (over)write telling you how many times I tried to publish something that instead it's still a draw?? I'd say no, let's get to the point.
For this month I chose 3 ingredients and every week I'll give you a recipe that includes them.
March ingredients are: peas, carrots and potatoes.

Che faccio? Scrivo righe su righe su quante volte ho provato a pubblicare un post che è rimasto nelle bozze?? No, direi no, passiamo subito ai fatti.
Per questo mese ho scelto 3 ingredienti ed ogni settimana vi proporrò una ricetta che li comprenda.
Gli ingredienti di marzo sono: piselli, carote e patate.



I decided to begin with a classic starter:

Russian salad

Ingredients for 6 people
300 grams carrots
300 grams potatoes
300 grams frozen peas
200 grams (circa) mayonnaise
a pinch of mustard powder

Dice carrots and potatoes. In a pan, bring salted water to boil (or if you prefer you can steam or microwave), dip potatoes in water, after 5 minutes add carrots, after another 5, peas, and cook for another 10.
Drain well and let cool.
Pour vegetables in a bowl, season with salt, pepper, vinegar and mustard.
Add as much mayonnaise as you like, cover, and put in the fridge for a couple of hours. Buon appetito!

Ho deciso di cominciare con un antipasto classico

Insalata russa

Ingredienti per 6 persone

300 g carote
300 g patate
300 g piselli surgelati
200 g (circa) maionese
un pizzico di senape in polvere

Tagliate a cubetti carote e patate. Portate a bollore in una pentola, dell'acqua salata (se preferite potete cuocere le verdure al vapore o al microonde), tuffateci le patate, dopo 5 minuti le carote, dopo altri 5 i piselli e cuocete ancora per 10 minuti.
Scolate bene le verdure e lasciatele raffreddare.
Versatele in una ciotola, conditele con sale, pepe, aceto e senape.
Aggiungete maionese a piacere e mettete in frigo per qualche ora.
